- 5 cups sliced carrots
- 3 Tb butter
- 1 medium onion, sliced thin
- 12 stuffed green olives
How To Make:
Steam or quick-fry the carrots.
Sauté onions in the butter until clear.
Slice olives. Put carrots in serving dish add onions, butter and olives.
Use parsley or fine herbs instead of salt.
Olives are extremely high in sodium.

Orange-Almond Carrots Recipe
- 1 Ib. carrots sliced in 1-inch pieces
- 1/2 cup orange juice
- 2 Tb. honey
- 1 Tb. butter
- 1/2 tsp. salt
- 1/4 tsp. lemon rind, grated
- 1/3 cup blanched slivered almonds
- 1/2 tsp. vitamin C crystals
- 2 Tb. fresh parsley
How To Make:
Steam carrots for 15 to 20 minutes, until tender.
Combine orange juice, honey, butter, salt and rind. Bring to a boil. Simmer, covered for 5 minutes.
Remove carrots from steamer, add to sauce, stir in almonds and heat through.
Stir in vitamin C and garnish with parsley. Serve immediately.
