- 1-1/2 tsp. soda
- 4 Egg's
- 1 tsp. allspice
- 1 Cup whole wheat flour
- 2-1/4 cups shredded carrots
- 1/4 Cup wheat germ
- 1/2 Cup chopped walnuts
- 1/4 Cup soy flour, sifted
How to Make Carrot Cake Recipe
- Mix oil, honey, and eggs until well blended.
- Add dry ingredients; blend thoroughly.
- Stir in carrots and nuts, then turn into well-greased and floured 6-1/2-by-10-inch pan.
- Then bake in preheated oven 40 to 45 minutes.
- Cool for a few minutes, then invert on rack for at least 30 minutes. Frost with cream-cheese icing, if desired.
